Job Description: Senior Batch Mixing Technologist (Bakery Manufacturing) Why this role matters Great baked goods start with great dough. In Manteno, IL, you’ll be the technical anchor for industrial dough mixing—turning precise formulations into consistent, high-quality batches, and enabling smooth handoffs to production. What you’ll own Translate production schedules and formulas into a sequenced batching plan. Stage and verify ingredients: weights, lot codes, expiration, allergen status, FIFO.Execute proper loading sequence into spiral/horizontal/planetary mixers. Control mix parameters: time, speed, water temps, dough temperatures, hydration. Evaluate dough development (elasticity, consistency) and correct variations. Identify and resolve issues: over/under-mixing, clumping, improper hydration. Complete precise batch records: weights, times, temps, lot codes, deviations, adjustments. Coordinate workflow to maintain timely dough flow to production. Coach Mixing Operators and contribute to training materials. Inspect equipment pre-use; escalate malfunctions and safety risks. Support sanitation, changeovers, and ingredient staging to meet GMP and food-safety requirements.
What you bring: 3+ years of bakery manufacturing experience with dough mixing/processing. Track record as Mixer Operator, Dough Maker, Lead Mixer, or comparable role. Direct experience with industrial mixing equipment and batch documentation. Problem-solving skills for dough-quality inconsistencies. Knowledge of allergen controls; understanding of HACCP, GMP, SQF.Leadership experience coordinating mixing workflows and training peers. Ability to work in variable temperatures with loud equipment. Capacity to lift up to 50 lbs. and stand/walk for extended periods, with or without reasonable accommodation. Willingness to support up to six days/week based on production needs.
Nice to have: Bilingual English/Spanish. Experience with automated ingredient dosing, water metering, hydraulic lifts, dough troughs/hoppers. Comp, Schedule, and Path
