About The Role: Blue Hill at Stone Barns is a two-Michelin star restaurant and leading voice in the sustainable foodmovement. Together with our nonprofit partner, Stone Barns Center for Food & Agriculture, we forma research and education institute working to develop a regional and ecological future of food. The Butcher will be responsible for assisting Stone Barns Center’s Butchery Plant Manager, therestaurant’s Sous Chefs, Chef de Cuisine, and Executive Chef Dan Barber through the processingand production of various menu and retail items.. This includes the rendering of whole animalcarcasses, production of specialty meat goods, and assignments pertaining to menu and recipedesign. At Blue Hill, we believe the best culinary professionals continuously strive to deepen their knowledgeof food systems, cuisine, and hospitality. As such, you will have the opportunity to participate inweekly education with guest speakers, classes, training (with Stone Barns Center’s livestock team aswell) and be eligible for a stipend for external education and dining opportunities.
About You:

  • Regulatory compliance: You adhere to cleanliness, health, and safety protocols, includingknowledge of applicable fire, health, and safety codes (possession of a Food HandlersCertificate or ServSafe Certification is a plus); HAACP compliance with Stone BarnsCenter.
  • Experience: 2-4 years experience in a butchery position, or equivalent knowledge andexperience. Tasks may include:
  • Processing animal carcasses for use in the kitchen and as standalone menu items.
  • Assisting in the development, standardization, and implementation of recipes and menus.
  • Understanding dietary restrictions and how they affect menu items.
  • Checking ingredient quality and receiving deliveries.
  • Collaborating closely with the culinary team to ensure seamless execution of service andculinary R&D programs.
  • Attending Cook’s meetings.
  • Maintaining equipment, tools, and the physical workspace.
  • Complying with all health department standards and practices and maintaining a cleanand orderly work environment for Blue Hill and Stone Barns Center at all times.
  • Performing all other job-related duties. This position requires manual dexterity and theability to follow oral/written instructions and procedures. To successfully perform duties, you must be able to safely lift up to 50 pounds and stand for long periods.   • Compensation: $18- $22 / hour
